We’re excited to share this Vegetarian dish we created from inspiration from Foraged & Found’s Sea Asparagus Pesto Sauce. When we tasted this fantastic sauce from Alaska, we knew we had to make a dish with it. This recipe is simple and full of flavor from the sauce and your veggies.
This recipe is a great way to sneak in some extra veggies for your family. Our 1 year old kept coming back for more with each bite. He’s a great recipe tester for us, if he likes it, we know you will too.
You can easily use three veggies in this recipe and the kids might not even realize it. It’s so simple to make and made for the perfect leftovers stored in our Mason Jars.

- Asparagus – we prefer the thicker stalks of asparagus, but the only ones available at the time were these thin ones.

How To Make Cauliflower Rice ,Veggies and Sea Asparagus Pesto Dish
- Prep your asparagus and tomatoes by washing, drying and cutting them.
- In a medium saucepan cook your cauliflower rice.
- In a separate pan add garlic and saute until fragrant. Melt butter in pan and add cut up veggies to pan. Cook veggies on medium heat until they’re cooked through but still slightly firm. You don’t want soggy, limp vegetables.
- Combine cauli rice in with veggie mixture and stir together. Add pesto sauce, dash of lemon juice and salt and pepper to taste. Stir everything until well combined, warm and serve.
- Add parmesan cheese to taste when serving. You can also add this while everything is still in the saucepan, so you can stir it in and melt it on the rest of the dish.

What Is Salicornia?
Salicornia is a superfood, also called sea asparagus or sea beans that are sourced and found in the wild on Alaska beaches. It’s processed in Alaska and shipped right to you in this delicious Pesto sauce.
This pesto sauce is perfect on Salmon dishes, other meat dishes and in pasta or pasta variations like ours!
Salicornia is edible in both the raw and cooked forms.
This pesto uses Salicornia and other ingredients that you can pronounce, and to us that means a lot. It’s not filled with additives and preservatives and other stuff you have no idea what it is.
We love finding food like that to use in our recipes. The fresher, the more authentic, the more flavor it brings.

Variations
- Use fresh lemon juice– we only had the container of lemon juice on hand. We think this recipe would’ve been even better with fresh squeezed lemon juice, so feel free to give that a try.
- Trade out caulirice– try riced broccoli or go for some pasta if you aren’t in need of a dish so rich in vegetables.
- Use fresh caulirice– make your own riced cauliflower instead of the bagged version.
- Add toppings– we totally think you could add pinenuts to this dish and really bring another new delish element to the recipe. It would add another nice crunch. Since the Asparagus pesto sauce already has almonds in it, if you add sliced almonds it would be another great variation.
- Add protein– try adding some chicken, shrimp or even Alaskan Salmon for a real fanstic recipe if you don’t need a vegetarian version.
- Swap garlic – instead of already minced garlic, you could get your own garlic cloves and mince your own fresh garlic.

Tips & Tricks
- Keep in mind that Salicornia is naturally salty in flavor, so you won’t have to use much salt. We recommend tasting the recipe before.
- Sauteeing your garlic first really helps bring out a nice fresh garlic taste to your dish.

Try this delicious veggie filled dish with cauliflower rice, diced asparagus, grape tomatoes and fantastic Found & Foraged Sea Asparagus Pesto sauce.
Ingredients
- Bag of Cauliflower rice
- 10 grape tomatoes, halved
- 8 asparagus pieces, cut up
- 1 teaspoon miced garlic
- 1 Tablespoon butter
- jar of Found and Foraged Sea Asparagus Pesto Sauce
- dash of salt and pepper to taste
- dash of lemon juice
