- Olive oil– you can also use avocado oil, grapeseed or canola oil if you need to swap out the olive oil
- Ground beef – you can also try ground turkey, ground chicken or ground sausage
- Yellow onion – could also use a white onion if needed
- Minced garlic – freshly minced is optimal, but you can also use the pre-minced in olive oil from a jar
- Beef broth – pairs well with ground beef. You can swap this out if using other ground meat
- Petite diced tomatoes – canned or fresh
- Crushed tomatoes – canned or fresh
- Tomato paste
- Italian seasoning – don’t have enough? Try mixing oregano and basil together.
- Salt and black pepper
- Lasagna noodles -swap out for other pasta noodles
- Shredded mozzarella cheese
- Shredded parmesan cheese

- Basil – fresh preferred, but can use dried if needed

How To Make Lasagna Soup Instant Pot Recipe
- Turn Saute function on Instant Pot and add oil. Let it heat up and add the onion and saute for 5 minutes. Toss in garlic and saute another minute.
- Cook ground beef in Instant Pot until rare.
- Add in broth, tomatoes, seasonings and pasta to the Instant Pot. Close the lid, seal the valve and Cook on HIGH pressure for 8 minutes.
- Perform a Quick Pressure release and remove the lid.
- While your soup is cooking, mix the cheeses in a small bowl and set in the fridge.
- Once soup is ready to serve, add the chilled cheese mixture and fresh basil for garnish.

Instant pot lasagna soup with bowtie pasta– trade out the classic lasagna noodles for some fun bowtie pasta noodles. Really you can choose whatever type of pasta you want and you’ll get nice, tender noodles.
Short on fresh seasonings? You can use dried or powdered seasonings if needed, like garlic powder, dried parsley and could even add garlic salt.
Want heat? Add a dash or two of crushed red pepper flakes.
Want veggies? Add in a handful or two of fresh spinach, arugula, kale, cooked mushrooms, diced bell pepper, etc, once you’ve performed your pressure release and are about to add the cheese mixture.
Swap beef broth– if you want to, you can use chicken broth, vegetable broth, chicken stock or turkey broth and if absolutely necessary, you can use plain water.
Kitchen Tips & Tricks
- Adjust the amount of beef broth you use as needed to help thin the soup out if necessary.
- The cooking time of this recipe doesn’t include the time it takes for your Instant Pot to come up to pressure or the time it takes to release the pressure. Be sure to allow extra time for both of those events.
- Make sure you break your noodles into 1-inch pieces so they cook evenly and everyone can enjoy them in their soup bowls.
- Make sure you perform a quick release of pressure, we suggest using a hand towel overtop the valve to keep from burning yourself on the steam being released.

How Do You Store Leftover Lasagna Soup?
We suggest storing your Pressure Cooker Lasagna soup in an air tight container, like a Mason Jar in the refrigerator.
How Long Does This Instant Pot Soup Last?
If stored properly, in an airtight container in the refrigerator, your leftover lasagna soup should last 4-5 days.
This soup tastes just as delicious later as it does when you first make it. In fact, it might even taste even more delicious as it’s had longer time to mix the flavors together.
Can You Freeze This Soup?
You certainly can freeze this Instant Pot easy lasagna soup. The only questionable thing about freezing this soup, is the lasagna noodles. They’ll change consistency when frozen and then reheated.
If you plan on freezing this soup for future use, we recommend waiting to add the noodles until you’re ready to enjoy. In this case, we suggest cooking the lasagna noodles separately.
We also recommend waiting to add the cheese until later as well, for the same reasons.
This soup can be frozen up to 3 months. Make sure to add it to your freezer inventory printable and label it properly.
How Do You Reheat Instant Pot Soup?
If you’re reheating this soup from the refrigerator, we recommend using a stovetop and saucepan to reheat until it reaches desired temperature.
If you’re wanting to reheat from frozen, if possible, remove from freezer and store in refrigerator overnight to start the thawing process. Then reheat as instructed above.

How Do You Make Vegan Instant Pot Lasagna Soup?
If you’re interested in Instant Pot Vegan Lasagna Soup, here are the modifications we recommend.
- Omit ground beef and swap it for a “meat” variation of your choice
- Swap the cheeses for dairy free versions.
- Swap beef broth for vegetable broth and ensure that that’s vegan friendly.
- Double check all ingredients to ensure they’re safe.

This soup recipe is slightly healthier than traditional full-fledge lasagna. In general this soup is a hearty, nutritious soup and can be altered to be more of a healthy soup with healthier meat choices, lighter on the cheese options and adding in more vegetables.

Easy Instant Pot Lasagna Soup Recipe
Ingredients
- 2 Tablespoons olive oil divided
- 1 pound ground beef
- ½ yellow onion diced
- 2 Tablespoons garlic minced
- 4 cups beef broth then more to thin as desired
- 1 14.5 oz can petite diced tomatoes
- 1 14.5 oz can crushed tomatoes
- 2 ½ Tablespoons tomato paste
- 2 Tablespoons Italian seasoning
- Salt and black pepper to taste
- 8 lasagna noodles broken into 1” pieces (6.5 oz)
- 1 ¼ cups shredded mozzarella cheese
- ½ cup finely shredded parmesan cheese
- 8 ounces ricotta cheese
- 2 Tablespoons chopped fresh basil for garnish
