How To Make Low Carb No Bake Cheesecake
- Add almond flour, pecans and powdered erythritol to the food processor and pulse until the nuts are finely ground. Then add the butter to the food processor and pulse until all is well mixed together.
- Press the mixture into the bottom of the jars, smoothing to make a bottom layer to each jar.
- Using a cold mixing bowl, whisk the heavy cream until it starts to form stiff peaks and set aside.
- In another mixing bowl, beat the cream cheese until smooth.
- Next, add in the vanilla, sweetener and salt to the smooth cream cheese and continue to mix everything together until well combined.
- Fold half the whipped cream into the cream cheese mixture. Once that’s well mixed, fold in the remaining cream in.
- Divide the cream cheese mixture into each of the jars evenly creating the next layer.
- Refrigerate the no bake cheesecake jars overnight.






What Is Powdered Erythritol?
Powdered erythritol is a sugar sweetener substitute that is popular in many low sugar or low carb diets. It’s a popular sweetener of choice for the keto diet followers and is great for using in baking dishes or dishes that usually use white sugar.
Powdered erythritol is a sugar compound, actually a sugar alcohol that is commonly made from corn and fermentation.
Variations
Add toppings– If you can afford the extra carbs, calories, etc. add a topping to your cheesecake jars. We have a great cherry cheesecake recipe you could use, or add our homemade apple pie filling to the top for a new spin on this tasty dessert.
Add drizzle toppings– add a drizzle of homemade apple crisp syrup to the top of the cheesecake (again, if you don’t have to worry about the carbs, calories, etc.), maybe try a drizzle of homemade caramel sauce (our recipe coming soon). Maybe a little drizzle of Pumpkin Pie Spice syrup.
Add crumbles to top– save a little of the bottom crumb mixture to sprinkle on top to bring the crumble texture to both sides of your bite.
Swap almond flour– If following a keto or low carb diet, you can also try coconut flour. We haven’t tried it ourselves, but we hear it’s a good option from our readers. If not following a keto or low carb diet, regular wheat flour will do fine as well.
Swap butter– while butter is the perfect keto ingredient, you can swap this out for coconut oil if needed.
Skip crust– if you’re looking to lower your carb count even more, you can omit the crust altogether. This will lower the carb count but it will not become 0, FYI.

Tips & Tricks
- Use a pipping bag to add the second layer to the jars. This makes the transfer easier, less messy and makes for prettier layers in your jars.
- Make sure your cream cheese is room temperature before whipping. It makes for a creamier, smoother texture.
- Make sure that you beat your heavy cream until the peaks start to form for a good, firm cheesecake texture. If you don’t beat enough or peaks don’t form, the texture won’t be thick or cheesecake like enough.
- For some extra flavor, add some lemon zest to your cream cheese mixture.
How Long Is This Low Carb Cheesecake Good For?
No Bake Keto Cheesecake should be stored in the Mason Jars, in the refrigerator. It will be good for 3-5 days.
Can You Freeze This?
You can freeze this if needed. However, we don’t recommend freezing to try to help firm it up, this will change the consistency.
Also know that if you are freezing this cheesecake for later, this may change the consistency of the dessert once you remove it from the freezer to thaw.
Why Is My No Bake Cheesecake In Mason Jars Not Firm?
If your no bake dessert isn’t firm enough, it’s most likely because you didn’t whip the cream until it formed stiff enough peaks.
It may also not be firm enough if it has not been refrigerated long enough.

Can Cheesecake Sit Out On The Counter?
We recommend refrigerating your cheesecake when not eating it. If you leave it on the counter, it should stay safe to eat for 3-6 hours.
Is This Low Carb Cheesecake Gluten Free?
Yes, it is. It uses an almond crust instead of a wheat flour crust. Always check your other ingredients to ensure that you are not using any hidden gluten.
