Vanilla Cold Brew Overnight Oats are seriously becoming a favorite in our household. The caffeine boost from the cold brew gives us a nice pep in our step and the overnight oats fills our belly up and keeps us full until lunchtime. No snacking is needed!

How To Make Cold Brew Overnight Oats with Vanilla

  1. Add your oats, cold brew and milk to your jar and mix it all together.
  2. Then add in your vanilla and maple and mix everything up.
  3. Add your salt and flaxseed and stir again.
  4. Cover with lid and place in fridge overnight.

What Is Cold Brew Coffee?

Even though this coffee has the word cold in it, it doesn’t have to be drank cold or served cold. It has to do with the way it was brewed.

What’s The Difference Between Iced Coffee and Cold Brew Coffee?

Iced coffee is coffee that has been made by pouring hot water over ground coffee beans in a machine or something similar. Then that coffee is refrigerated or just served over ice. It is made differently than cold brew coffee.

Cold brew coffee also requires more coffee beans than regular coffee and is far less acidic and has a stronger flavor than regular coffee used in iced coffee. Both of these coffee options are great for hectic mornings and will be a good option for all coffee lovers.

How To Make Cold Brew Coffee?

Want to make your own cold brew coffee so it’s ready for the next day?

Making cold brew coffee is pretty easy. All you have to do is combine 1 ½ cups of cold water with ⅓ cup of coarsely ground coffee in a mason jar and let it “brew” overnight.

The next morning, use a strainer and strain it twice. Then mix it with your oats, milk or whatever else you’re using it in.


Milk options– Use cow’s milk or a cow’s milk alternative like oatmilk, coconut milk, soy milk, or, our personal favorite, vanilla almond milk. The vanilla in the milk compliments the vanilla extract.

Add extra– Flaxseed is a great option to add but you can also add hemp seeds or chia seeds. If chia seeds are your jam, check out our Chia Seed Pudding recipe coming soon. You can also top your recipe with chocolate chips, cocoa nibs, chocolate drizzle, etc.

Add vanilla almond butter– Adding a tad of this can make your oats even creamier and thicker. This also brings out more of the fantastic vanilla taste. You can also add any nut butter you like.

Add a scoop of vanilla yogurt– Adding a scoop of yogurt is a great way to get your probiotics in and bring out even more vanilla flavoring.

Sub out maple syrup– try other sweeteners like honey, agave syrup or stevia.

Recipe Tips

  • You can use ready made cold brew coffee or brew your own fresh cold brew coffee.
  • Don’t omit the salt if you can help it, it really adds a pop of flavor to your dish.
  • For this make ahead breakfast, you can use iced coffee instead of cold brew concentrate coffee if you want. Keep in mind you’ll need to adjust how much iced coffee you use. Cold brew is more concentrated, so you’ll need to adjust appropriately.

What Kind Of Oats To Use?

Ever go down the breakfast food aisle in the grocery store only to be overwhelmed by the many, various oat choices to choose from? How do you know which oats are for overnight oats?

Well, we can say choose your favorites, but each type of oat is best for certain recipes and not the best for some other recipes.

Rolled oats are what you want to use in this oat recipe. Steel cut oats become way too chewy because they don’t soften enough and instant oats become too soggy if left to soak overnight.

Do You Have To Soak Oats Overnight?

Contrary to the name of this recipe ‘overnight’ oats don’t actually have to soak overnight. They really only need a few hours of soaking before you enjoy them. Most overnight oat recipes can be ready after about 4-5 hours if you need to eat them in a hurry.

How To Add Protein To Your Coffee Overnight Oats?

If you’re looking to up your protein intake with some delicious vanilla oats, you can add a scoop of protein powder or greek yogurt.

Use your favorite protein powder. You can also use a vanilla protein powder (can you tell we looooooove vanilla overnight oats!??!)

How Do You Store Overnight Oats?

Keep your oats in an airtight container, like your mason jar in the fridge. You can also use Weck Jars, which are similar to mason jars and are another fun way to show off your oats.

How Long Are Overnight Oats Good For

Once you make these oats and store them in the fridge, they’re good for about 4-5 days. This makes them the perfect meal plan recipe! Make them Sunday and have them all week long for breakfast.

Keep in mind that the longer your oats sit, the more liquid they soak up. You may need to add more milk or liquid when you’re ready to enjoy them.
