How To Make The French Silk Chocolate Pie

Chocolate Layer

  1. First of all, gather all of your ingredients together to make the chocolate layer. Combine the chocolate chips and butter in a heatproof bowl. Microwave for 15-second intervals, stirring in between until the chocolate is melted and smooth. Set aside to cool while you work on the next steps.
  2. In a medium-sized bowl, microwave the cream cheese for 10-second intervals, stirring in between, until the cream cheese is very soft. 
  3. Beat the cream cheese at a high speed until smooth and creamy, about 1-2 minutes with an electric mixer.
  4. Add in confectioner’s sugar and combine well.
  5. Next, add in the cooled-down chocolate and cocoa powder, and continue to mix until thoroughly incorporated. You want a silky texture to make a rich chocolate filling. Set aside until you need it. 

Whipped Cream

  1. Add the heavy cream to the bowl of a stand mixer. Start beating the cream on low with the whisk attachment, and increase it to a medium speed as the cream starts to thicken. When the cream starts to thicken, add the powdered sugar and vanilla extract. Continue to beat just until stiff peaks form. 
  2. Remove about ⅓ of the whip cream and gently fold the whipped cream into the chocolate layer mixture. Place the remaining ⅔ of the whipped cream in the fridge until ready to serve.

Assembly

  1. Add about 1 tablespoon of cookie crumbs to the bottoms of the jars you are using to serve this pie. If you need to move the crumbs around, you can shake them slightly to get an even-ish layer on the bottom.
  2. Add about ¼ cup of chocolate pie filling on top of the cookies. Use a spoon if you need to move the filling around a bit to level it. 
  3. Spread additional cookie crumbs on top of the chocolate layer and chill for at least two hours, or until ready to serve. 

To serve

  1. Just before serving, add the remaining whipped cream to a large piping bag fitted with a large star tip. Make sure to scrape the bottom of the bowl. Pipe the whipped cream onto the top of the jars. (Alternatively, you can also just use a spoon and do a nice dollop of whipped cream on top of the jars)
  2. If you have any remaining crumbs, you can top them with the crumbs or broken cookies. You could also add some chocolate shavings if you wish.

Want to make this easier? Purchase store-bought whipped cream instead of making homemade whipped cream. Simple and effective. 

Want to give this a nutty flavor? Use Nutella in the melted chocolate to add a rich and in-depth hazelnut flavor. Yum!

Want to make an adults-only version? Stir in some Irish cream liquor into your chocolate mixture to give this a more decadent and boozy flavor.

  • 2 tablespoons unsalted butter (30 grams)
  • ½ cup cream cheese (120 grams)
