How To Make The Gluten Free Lemon Blueberry Mason Jar Cakes

This is the full recipe to make your very own gluten-free mason jar cakes flavored with lemon and blueberries.

  1. Preheat the oven to 350 degrees and spray the bottom of a 9×9 baking pan with cooking spray and set it aside until you need it. You could also use parchment paper if needed.
  2. In a large mixing bowl, prepare the cake mix as directed by the box using the eggs, butter, water, and vanilla extract, Mix until combined and there are no lumps. Follow the box instructions for more information.
  3. Pour the batter into the baking pan and bake as directed on the cake mix box. Bake until golden brown and a toothpick inserted in the center comes out clean.
  4. Once it is done baking, remove it from the oven and make sure you give the cake time to cool down on a cooling rack. This might take around 30 minutes but could be longer. If you want a moist cake then this will be sufficient. If you want a cooler and firmer cake, which makes it easier to cut, you can pop it in the refrigerator on the wire rack after it has cooled.
  5. Prepare the pudding mix as per the packet instruction. You may need to use things like cold milk to do this. Mix until the pudding has thickened and then set aside in a separate bowl.
  6. Wash and prepare the blueberries and add them to a small bowl until you need them.
  7. Cut the cooled cake into squares.
  8. Now it is time to assemble the mason jars. Add the cake, blueberries, and lemon pudding, and layer it any way you want. Top with lemon slices, blueberries, and some whipped cream.
  9. Serve your mason jar gluten-free cake with strawberries and enjoy.

What is gluten-free?

A gluten-free diet is a nutritional plan that strictly excludes gluten, which is a mixture of proteins found in wheat, as well as barley, rye, and oats.

Many people are advised to follow a gluten-free diet or choose to if they find they get bloated after certain meals.

When it comes to gluten-free baking and gluten-free cakes there is so much more choice these days.

Recipe Variations

What if I don’t want to use blueberries? You can use strawberries if you wish or any fruit that tastes good with the lemon pudding mix.

The combination of lemons and juicy blueberries does work really well, but don’t be afraid to make this easy cake recipe your own.

Do I need to use the cake mix or instant pudding? If you feel confident baking the cake yourself without the cake mix or making the instant pudding then go for it!

The cake mix and instant pudding are designed to give you a helping hand in the kitchen.

Want to try a different flavor? You could use a different flavor cake mix or instant pudding flavor if you wish. You could different ones and serve them as a dessert buffet for when you have guests over.

Serving suggestions. If you wanted to change things up a bit you could add some cream cheese frosting to the top of the cake.

You could also look to add some wild blueberries or even some powdered sugar or icing sugar with some fresh lemon zest if you want to keep things simple.

The original recipe has suggested whipping cream and a lemon slice but you can serve it how you wish. Make sure to serve it a room temperature or chilled.

Tips & Tricks

  • If you want a cooler and firmer cake, which makes it easier to cut, you can pop it in the refrigerator after it has cooled.
  • If kids are helping you make this one of the best gluten cake recipes you have tried then make sure they are supervised when near the oven.
  • Avoid opening the oven until the cake is at the stage of being nearly cooked. It can cause cracks on the surface and delay the cooking time as the temperature in the oven drops.
  • Avoid mixing the cake mix and instant pudding at a high speed. You want no lumps but also want a smooth texture. You can use a hand mixer or electric mixer but have the setting set to a low speed.
  • Vanilla extract is a place that some manufacturers like to hide gluten, so always check yours to ensure that it is gluten free!

Storage

To keep your gluten-free mason jar cake fresh it is best to store it in your mason jar with a sealed lid or any other airtight container that you have.

It is also advised to store it in a cold and dry place. If possible store it before adding the blueberries and cream and serving it in your mason jars.

However, if you do serve them up and then there are leftovers then it may be best to refrigerate them instead.

You could also freeze the cake and then defrost it and present it as a dessert when you need it. The perfect option to have as a backup.
