How To Make The Gluten Free Lemon Blueberry Mason Jar Cakes 

This is the full recipe to make your very own gluten-free mason jar cakes flavored with lemon and blueberries. 

  1. Preheat the oven to 350 degrees and spray the bottom of a 9×9 baking pan with cooking spray and set it aside until you need it. You could also use parchment paper if needed.
  2. In a large mixing bowl, prepare the cake mix as directed by the box using the eggs, butter, water, and vanilla extract, Mix until combined and there are no lumps. Follow the box instructions for more information. 
  3. Pour the batter into the baking pan and bake as directed on the cake mix box. Bake until golden brown and a toothpick inserted in the center comes out clean. 
  4. Once it is done baking, remove it from the oven and make sure you give the cake time to cool down on a cooling rack. This might take around 30 minutes but could be longer. If you want a moist cake then this will be sufficient. If you want a cooler and firmer cake, which makes it easier to cut, you can pop it in the refrigerator on the wire rack after it has cooled. 
  5. Prepare the pudding mix as per the packet instruction. You may need to use things like cold milk to do this. Mix until the pudding has thickened and then set aside in a separate bowl. 
  6. Wash and prepare the blueberries and add them to a small bowl until you need them.
  7. Cut the cooled cake into squares.
  8. Now it is time to assemble the mason jars. Add the cake, blueberries, and lemon pudding, and layer it any way you want. Top with lemon slices, blueberries, and some whipped cream.
