It goes without saying that Christmas Meringue Pops are a hit for kids and adults. Due largely to the sugar and vanilla flavoring, but it’s the white chocolate that really speaks to us.
Now there’s a three-step process to ensuring these pops don’t fall flat and become a gooey mess. Yet, once you get the hang of it and have your coloring to its desired hue, you’ll be unstoppable- at least in terms of these homemade meringue pops.

How To Make Grinch Meringue Pops

- Set the oven to 200 F and line a baking sheet with parchment paper.
- Grab your stand mixer and blend your egg whites, salt, and cream of tartar at medium-high speed until it begins to froth.
- Next, add in your superfine sugar 1 Tablespoon at a time and continue to beat at medium-high speed until the mix begins to form stiff peaks.
- Once the peaks begin to form, add in your vanilla and green gel coloring and mix for approximately 45 seconds before transferring into a piping bag.
- Once your piping bag is filled, squeeze 2 to 3 ” dollops of meringue onto your pastry sheet and sucker sticks.
- After the base has been created, swirl the remaining meringue around the base until you reach your desired sucker size.
- Place your meringue pops in the oven for approximately 1 hour to set and then let dry for approximately 2 hours or overnight.
What Is Meringue?
It’s an egg white foam treat that is firm, stiff, and has the ability to hold shape. This is sweetened and is a tasty, unique treat.
Variations
Here is where your creativity comes into play as you can vary these Christmas Meringue Pops with ease.
Short on superfine sugar? Unable to find superfine sugar or short? No worries, regular sugar will work as well. But, you’ll need to take the extra steps of turning it into a superfine sugar by using a superfine processor and blend it on high for 2 minutes. It should create a dust form sugar that you can use.
Add more or use less gel food color– Depending on how green you want your Meringue Pops to be, you could use 1 to 2 drops with relative ease. We’ve found that the lighter Grinch coloring is well received with the kids and doesn’t overpower the other colors’ ingredients, but this all depends on your theme and intended result.
Add more white chocolate– You can add a bit of white chocolate- melted and cooled to room temperature- into your meringue peaks or create a separate batch to layer on top of the original. Bring some color with strawberry flavoring or butter pecan and get to piping! This is a great way to transition these into Valentine’s Day Meringue Pops!
Tips & Tricks
- First thing you should do is bring your egg whites to room temperature. This is important because cold egg whites won’t beat properly, and instead of a light and airy whip, you’ll have a somewhat chunky goo, so making sure that your egg whites have come to room temperature.
- Ensure that you’re using superfine sugar. It can be called granulated or caster sugar. If you see Baker’s Sugar, that’s one of the better options to choose as it’s a super ultrafine can sugar created for baking and blending.
- Baker’s Sugar’ I would go with that because Baker’s Sugar is a super ultrafine cane sugar whose purpose is for blending and baking. If you’re pressed for time or are unable to locate superfine sugar, then no worries! Regular sugar will work as well, but you’ll need to take the extra steps of turning your regular sugar into a superfine processor and blend on high for approximately 2 minutes. The processor will break down the sugar particles into a dust form, and now you’re ready to begin your pops.
- To avoid weight down, firm and tough meringue, make sure you add the sugar in a Tablespoon at a time to prevent the peak issue.
- Using a blender on the medium to high setting and waiting 30-45 seconds between Tablespoons of sugar being added will help make sure you don’t mess the meringue up.
- It’s best to attach your meringue to the sucker sticks in multi-step piping. It’ll make for a studier pop and one that can be refrigerated without falling apart.
- Don’t have pipping bags? No problem, just use a ziplock bag and cut the corner off to create a makeshift bag.
- Out of parchment paper? No worries on this either. Try using a baking silicone mat, we enjoy using ours.
- To make decorating easier: melt the white chocolate in a double boiler or use a microwave. Grab a toothpick to dab a small amount of melted white chocolate onto the dried meringues. Quickly place a candy heart on top of the dot of white chocolate.

Can You Make These Ahead Of Time?
You can make these Green Meringue Pops beforehand and store them in the refrigerator for up to 3 days! The meringue will stiffen a bit- and that’s totally ok-calling for a sweeter, more solid lollipop worthy of the store shelves.
How Do You Know If Your Meringue Is Ready?
If you can take a glob of meringue and roll it between your thumb and first finger without feeling gritty sugar, then you know your meringue has been whipped enough.
How To Make Perfect Round Meringue Pops Every Time?
Put your meringue in your pipping bags, squeeze the meringue out onto the pan from the center out in a circular motion. Make sure to lift away from the circles as you are finished with it to give it the proper pop look.
There is no right or wrong size, so make them as you wish.
Can You Make These Without Lollipop Sticks?
Sure can. If you’re looking to just make stand alone meringue, just make them as listed above and ensure to pull away to form the perfect meringue peak.

Do I Have To Use Cream of Tartar
This is NOT a step or ingredient that you can skip. This helps the egg whites set up correctly and helps them keep their shape when cooking.
How To Store?
Store these homemade pops in a Mason Jar in the rerigerator for 3-5 days. Store them in a nonhumid area as they’ll try to absorb the moisture in the air and will change consistency.
Can You Freeze?
Yes, you can make these homemade lollipops, just store them in an airtight container or freezer-safe bags before freezing for up to 3 months.
