How To Make The Hot Cocoa Cookies

  1. Gather all of your ingredients together and preheat the oven to 350 degrees Fahrenheit.
  2. Get your baking sheet and place a piece of parchment on top of it.
  3. In a mixing bowl or the bowl of a stand mixer, cream the butter and salt together until they are combined. You can do this by hand or use an electric mixer or stand mixer. Then add the sugars and mix them together.
  4. Crack both eggs into the bowl and add the vanilla then blend together until everything is mixed well.
  5. Pour the dry ingredients which are your flour, cocoa powder, and baking soda into the wet ingredient mixture in the mixing bowl and mix together until combined into a thick dough. Now add your chocolate chips to the mix and stir thoroughly.

Recipe Variations

What should I serve with these hot chocolate cookies? You could serve them with some milk or even hot cocoa. Enjoy them on their own or add them to a selection of bakes and treats you have made. They are delicious and do not disappoint.

Want to make more? Double up the quantities to make more of these cute meringue cookies. These make excellent homemade edible gifts during the festive season.

Try different chocolate. We have used semi-sweetened chocolate chips in this recipe to try and control the sugar content but feel free to switch that for dark, milk, or white chocolate depending on your preferences. No matter what you will get that chocolate flavor.

Use one large marshmallow. Instead of the mini marshmallow bits, you could use just one by placing it in the center of each cookie. Or if you prefer break up a larger one.

Tips & Tricks

  • Always add parchment paper to your baking sheet as this avoids these delicious cookies from sticking to the baking tray.
  • Space out your cookies when you place them on the baking sheet. They will spread a little so this will avoid them from joining together.
  • Be careful when adding marshmallows to the cookies as the oven and the cookies will be very hot.
  • If you don’t have a stand mixer you can use a hand mixer instead.
