How To Make The Mini Apple Pie Cheesecake


  1. In a medium bowl, pour the whipping cream and mix with an electric mixer or stand mixer on medium-high until the cream starts to thicken. 
  2. Carefully, and in sections, add confectioner’s sugar to the thickened cream. Ensure that it is combined before adding more sugar. Continue to mix until stiff peaks form. Then set this mixture aside.
  3. Use your electric mixer to combine the softened cream cheese, sugar, and vanilla extract, until smooth and creamy, in a separate bowl.
  4. Carefully, fold in the whipped cream that you prepared in the first and second step, until well incorporated.
  5. Add the cream cheese mixture to a piping bag or gallon-sized plastic bag and place it in the fridge to chill for at least 1 hour.  However, don’t cut the tip - you will do that when you are ready to pipe. We have to get the pie filling ready first.  

Pie Filling

  1. Let’s get cracking on the apple filling. First, dice the apples, and place them in a small saucepan.  
  2. Add the lemon juice, brown sugar, flour, cinnamon, maple syrup, and water to the pot and stir together. 
  3. Now add the mixture to a pan and place on medium heat. Stir occasionally until they are soft. This will take about 15-20 minutes. 
  4. You may place the apples in the fridge to cool if desired.

Pie Crust

  1. Now to make the pie crust, using a food processor, or another desired method, you will need to crush the graham crackers into fine crumbs. This will make your simple graham cracker crust.
  2. Combine the graham cracker crumbs and butter and mix together in a small bowl. 
  3. Place about 2 tablespoons of crumbs into the bottom of each jar. Do not press down. You can shake the jar or use a spoon to move crumbs around if needed.

Whipped Cream

  1. Add whipping cream to a mixing bowl. 
  2. Use an electric mixer and beat until the cream starts to thicken. 
  3. Slowly add the confectioner’s sugar, maple syrup, and cinnamon and continue to beat until stiff peaks form. Once you have done this you can set aside.


  1. Cut a hole in the tip of the cheesecake bag. Pipe a layer of cheesecake on top of the graham cracker crumbs.
  2. Drop about 2 tablespoons of pie filling on top of the cheesecake filling, using a spoon to help level it out a bit.
  3. Add whipping cream on top of the pie filling, and top it off with any remaining cracker crumbles or sprinkle with cinnamon.

Recipe Variations

Want to cut down on sugar in your cheesecake? If you’re avoiding sugar, you can make alternations in this recipe to make it suitable for you. Replace full-fat cream cheese with low-fat cream cheese. Use stevia instead of white or brown sugar. These changes may help make this cheesecake more suitable for your dietary needs.

Not a fan of apples? No worries! This will work well with other fruit. You can create a berry compote and add that on top of the cheesecake. 

Add a caramel layer. Apples and caramel work very well. You could make mini caramel apple cheesecakes by adding a layer o homemade caramel or store-bought. Perfect for anyone who has a sweet tooth.

You don't need to use a specific type of apples for this recipe. Granny smith apples, red apples, pink lady, sweet apples, or your favorite kind will work well. But the best apples will have a sharp flavor as that will work well with the creamy cheesecake filling.

Can you make this ahead of time?

This should keep in the fridge for several days. If you are making it ahead, you will want to add the whipped cream just before serving so that it doesn’t deflate before serving.

Can you freeze this?

Yes, you can freeze these mini cheesecakes. Cover them or use the lid and freeze them for up to 2-3 months.

You could add a drizzle of caramel sauce, prepared whipped cream, a scoop o ice cream sprinkle a teaspoon of ground cinnamon on top of the cheesecakes. So many wonderful options.
