How To Make The Mini Apple Pie Cheesecake
Cheesecake
- In a medium bowl, pour the whipping cream and mix with an electric mixer or stand mixer on medium-high until the cream starts to thicken.
- Carefully, and in sections, add confectioner’s sugar to the thickened cream. Ensure that it is combined before adding more sugar. Continue to mix until stiff peaks form. Then set this mixture aside.
- Use your electric mixer to combine the softened cream cheese, sugar, and vanilla extract, until smooth and creamy, in a separate bowl.
- Carefully, fold in the whipped cream that you prepared in the first and second step, until well incorporated.
- Add the cream cheese mixture to a piping bag or gallon-sized plastic bag and place it in the fridge to chill for at least 1 hour. However, don’t cut the tip – you will do that when you are ready to pipe. We have to get the pie filling ready first.
Pie Filling
- Let’s get cracking on the apple filling. First, dice the apples, and place them in a small saucepan.
- Add the lemon juice, brown sugar, flour, cinnamon, maple syrup, and water to the pot and stir together.
- Now add the mixture to a pan and place on medium heat. Stir occasionally until they are soft. This will take about 15-20 minutes.
- You may place the apples in the fridge to cool if desired.
Pie Crust
- Now to make the pie crust, using a food processor, or another desired method, you will need to crush the graham crackers into fine crumbs. This will make your simple graham cracker crust.
- Combine the graham cracker crumbs and butter and mix together in a small bowl.
- Place about 2 tablespoons of crumbs into the bottom of each jar. Do not press down. You can shake the jar or use a spoon to move crumbs around if needed.
Whipped Cream
- Add whipping cream to a mixing bowl.
- Use an electric mixer and beat until the cream starts to thicken.
- Slowly add the confectioner’s sugar, maple syrup, and cinnamon and continue to beat until stiff peaks form. Once you have done this you can set aside.
Assembly
- Cut a hole in the tip of the cheesecake bag. Pipe a layer of cheesecake on top of the graham cracker crumbs.
- Drop about 2 tablespoons of pie filling on top of the cheesecake filling, using a spoon to help level it out a bit.
- Add whipping cream on top of the pie filling, and top it off with any remaining cracker crumbles or sprinkle with cinnamon.
