How To Make Mini Chocolate Peppermint Whoopie Pies

  1. Preheat your oven to 375 degrees and set oven racks in the upper and lower third of the oven.
  2. Grab a baking sheet and line it with parchment paper.
  3. In a large mixing bowl, blend the brown sugar, buttermilk, oil, egg, and vanilla extract until well blended.
  4. Next, add in your flour and once fully blended, transfer into a piping bag and place ¾ inch circular drops onto your parchment paper.
  5. Once all the batter has been piped, transfer to the oven to bake for approximately 8 minutes.
  6. Once done, transfer to a wire rack to cool while preparing your filling.
  7. Using a stand mixer, blend your cream cheese, powdered sugar, and peppermint extract on medium speed until thoroughly blended.
  8. Once blended, transfer to a piping bag and pipe small dollops of filling onto each cooled cookie, then merge the cookies to make pies.

What Are Whoopie Pies?

Whoopie pies are dessert treats that are typically made up of two cake-like cookies that are filled with a filling, usually a buttercream type filling in between.

Recipe Variations

No peppermint extract? No problem, try creme de menthe. It may alter the flavor just a bit, but you can add some more peppermint crushed candies.

Dark Chocolate- Make a dark chocolate cookie cake and use that for your whoopie pie "crusts". The dark chocolate pairs really well with this buttercream filling.

Add more brown sugar- For those of you with a wicked sweet tooth, try 2 cups of light brown sugar, followed up with the buttermilk and cocoa powder, which gives you a richer, more decadent chocolate syrup before the all-purpose flour begins to work its magic to create the cookie cake layer.

Add layers- to really bring out even more fun flavors, feel free to add your own layers to these pies. We used our friends Chocolate Ganache recipe and will be sharing our caramel sauce recipe soon enough. When we made it with the caramel, we omitted the peppermint.

Infuse filling- infusing a few bites of the crushed peppermint candies into the filling blend is a tasty variation. The crushed peppermint candies are placed in a bowl and used to coat the cookies at the end, but if you're looking for that sharp, minty taste like Andes Chocolate Peppermint or Girl Scout's Chocolate Thin Mints, then add a few tablespoons in while blending the filling with the peppermint extract.

Tips & Tricks

  • If you don't have a stand mixer with paddle attachment to make your filling, you can use a regular electric mixer or even whisk by hand. Use whatever you have on hand and it will be just as yummy.
  • Add flour in slowly- adding in too much too soon can result in a clumped up mix which can take more time to work through than necessary. Slowly incorporating your ingredients allows the other ingredients to infuse fully and not just be stacked on top of each other.
  • Don't have any pipping bags? No problem! Just add your filling to a ziplock bag and cut off the corner to create a makeshift pipping bag.

Can You Make These Whoopie Pies Ahead Of Time?

If you need to prep these dessert treats ahead of time, you should be able to. You can make them up to 24-48 hours in advance.

You can store them in the refrigerator. In fact, this may even bring out more of the peppermint flavoring.

Can You Freeze These Peppermint Whoopie Pies?

You absolutely can! In fact, we love them even more frozen. We think freezing them before enjoying them tastes the best.

Think frozen Oreos. The crispness of the cookie followed up with a tough inner filling makes for a sweet treat when you're craving something crunchy.

If that's what you're going for with these, after a few hours setting in the freezer, these whoopie pies have a sweet crunch that's to die for.

If you're looking to freeze them to save them for later, they'll be good in your freezer for 3-6 months.

Don't forget to put them on your FREEZER INVENTORY LIST to make sure you enjoy them in time and don't lose track of what is in your freezer.

Can You Freeze Just The Outer Cookie Crusts?

Yes, if you want to make the cookie cake crusts ahead of time and freeze them, you can. Once you are ready to use them, let them thaw while you make some fresh peppermint buttercream filling.

How Do You Thaw Frozen Whoopie Pies?

Whether you're thawing a fully made whoopie pie or just parts of it, we recommend removing from the freezer and placing in the refrigerator to thaw at least overnight.
