What Are Cadbury Mini Egg Candies
Mini cadbury eggs have crispy outer shells that are fun springtime Easter colors. The inside is made up of super creamy, rich, decadent milk chocolate. They’re made by the same company that makes Cadbury Creme Eggs that everyone rants and raves over during the Easter holidays.
Mini Egg Cookie Recipe Tips
- For best results, use softened butter to make creaming it with sugar easier. But DON’T melt the butter!
- No food processor, no problem! Toss your eggs in a ziplock bag and use a rolling pin (or wine bottle) to roll over the candies and crush them up a bit for the cookie topping.
- Don’t overmix your dough or you’ll end up with cakey cookies instead of chewy Easter cookies.
- Remove your cookies from the oven when they’re still slightly gooey. As you let your cookies cool on the cookie sheet on the counter, the cookies will continue to finish baking. This helps you get the perfect Easter Egg cookie texture without over baking your cookies.
- Scrape the sides of the bowl as your mixing everything to form your dough so everything necessary gets incorporated.
- If your dough is too sticky, add in a small amount of flour.
- Make sure your butter and sugars are well incorporated and mixed before adding in the other ingredients. This may take a few extra minutes but will help you get that perfect cookie consistency!
- Don’t skip out on the cookie scoop. It helps you get even looking cookies. All the same size and shape.
- No parchment paper? No problem! Grab your baking mats. They’re great for baking, help remove cookies easier and make clean up a breeze.

Variations
These really are the easiest cookies but if you want to change them up, here are some options that even the easter bunny would approve!
Omit mini chocolate chips– instead add more mini eggs to your batter.
Add other candies– try white chocolate chips, butterscotch chips, dark chocolate chips, etc. for some really tasty easter treats
Add sprinkles– to bring even more festive feel to your cookie toppings, bring out your Easter sprinkles and add them with your eggs on top the frosting.
Add cocoa powder- want a chocolate chocolate chip cookie? Add some to this recipe with some extra chocolate chunks and it’s a chocolate lover’s dream!

Why Are My Egg Cookies Dry?
Did you over mix your cookie batter when incorporating the wet mixture with the flour?
Over mixing the flour can give you dry cookies that are more like cookie cakes rather than chewy cookies.
Why Are My Cookies Flat?
Believe it or not, the answer is flour! Getting the perfect cookies is all about getting your flour measurement correct.
If you had flat cookies, your cookie batter didn’t have enough flour.

Why Didn’t My Cookies Spread Out?
Guess the culprit again- flour! if you have little hockey pucks for cookies, you added too much flour.
How Long Do These Cookies Last?
These cookies are best enjoyed the same day they’re made. It’s optimal to gobble them up within 24 hours but they can be kept up to 3 days if stored properly.

How To Store Candy Egg Cookies
Store any leftover cookies in an airtight container or mason jar on the countertop for up to 3 days. You can also add a slice of bread in the container to help keep them soft.
