How To Make The No Bake Eggnog Cheesecake

  1. Gather all of your ingredients together. Crush the Biscoff Cookies with a Rolling pin or food processor. This will give you the cookie crumble base. 
  2. Add the melted butter and brown sugar and stir to incorporate. Then add the crust mixture to the bottom of the jars and press it down a little. 
  3. In a large bowl or the bowl of a stand mixer, beat cream cheese and sugar together until creamy.
  4. Next beat in the eggnog, rum or vanilla extract, nutmeg, and cinnamon until creamy.
  5. In a separate small mixing bowl using the whisk attachment on a hand mixer whip the heavy cream until stiff peaks form. This should be around 3-4 minutes. 
  6. Fold whipped cream into the eggnog mixture and then add the cheesecake mixture to a large piping bag. 
  7. Cut off the top of the piping bag and then pipe the cheesecake into the jar. Shake the jar lightly to help the cheesecake settle over the crust.
  8. Add more cookie crumble on top of the creamy cheesecake and repeat until the jar is full.
  9. Refrigerate until ready to serve.
  10. Sprinkle crushed cookies or nutmeg over the top and enjoy!

Recipe Variations

Don’t have any mason jars? You can use ramekins instead for this easy cheesecake recipe. Be mindful that a ramekin is smaller so you will use less cookie crumble than the jars. 

No biscoff cookies? Don’t worry. Graham crackers, Golden Oreo cookies, and Nila wafers will all make great crusts for this no bake eggnog cheesecake. Graham cracker crumbs are usually used for cheesecake recipes. 

Want to make one large cheesecake? You can use a springform pan and create one big eggnog cheesecake. Put all of the cookie crumble at the bottom of the pan and then top with the cheesecake mixture. Allow time to set in the refrigerator. 

Decorate differently. You could add some flaked chocolate or powdered sugar to the top of the cheesecake instead of nutmeg or cookie crumbs. The perfect holiday treat.

  • You can use cool whip in place of the heavy cream.  Fold the cool whip into the cheesecake filling instead of the heavy cream.
  • A stand mixer will make things quick and simple when creating the creamy eggnog cheesecake mixture. 
  • Make sure you give these cheesecakes plenty of time in the refrigerator to set. This helps with the texture.
