The smoothness of the pumpkin ice cream blended with crumbled ginger is a delicious initiation into ice coffee.
The iced coffee craze began in the mid-90s. However, it quickly revamped into a cultural norm for college kids, tech gurus, and now every day 9 to 5’ers.
Although the pumpkin and gingersnaps give you enough spice to be satisfied, it’s the touch of cinnamon that does it for me.
That pinch of cinnamon tones down the tang of ginger just enough that it really does feel like you’re drinking a dessert! Either I have a blast creating these, and at a max prep time of 10 minutes, I know you will enjoy them too.

What Are Ginger Snap Frappucinos
Gingersnap Fraps used to be a Secret Menu Starbucks item only. They were one of the ones that you had to hope the Barista’s knew how to make, otherwise, you were standing there telling them how to make it or pulling it up on your phone so they can write all the info on the cups.
We took the classic Gingersnap Frap and gave it an extra fall flavored twist, to create the Pumpkin Gringersnap Frap.

- Pumpkin ice cream
- Ginger snap cookies
- Milk – See our variation suggestions below
- Espresso (optional) – but recommended if you’re a caffeine lover
- Cinnamon
- Whipped Cream – for a dairy free/vegan option try cocowhip or almond milk whipped cream.

How To Create The Best Pumpkin Ginger Snap Frappuccino
- In a blender, add pumpkin ice cream, three (3) ginger snaps, and cold milk and mix on high until well blended.
- Next, transfer your mix into a mason jar and set it aside.
- Grab your shot of espresso and cinnamon and blend together until smooth.
- Once blended, transfer into pumpkin mixture and stir until it blends.
- Take whipped cream and place it on top of the pumpkin mixture.
- In a ziplock bag, crush 1 additional ginger snap cookie and use this to top the whipped topping along with extra cinnamon.
- Enjoy!

- Leave out the pumpkin ice cream for a classic Gingersnap Frap.
- Substitute the pumpkin ice cream for your other favorite fall flavor. Think apple pie ice cream or pumpkin spice ice cream.
- Substitute your regular milk with half and half, almond milk, coconut milk, whole milk, skim milk, or oat milk.
- Instead of Pumpkin Ice Cream, try pumpkin pie filling or pumpkin puree with vanilla ice cream as a base.

Can You Make This Frappuccino Ahead Of Time?
We don’t recommend making this recipe ahead of time. With the nature of using ice cream in it, and blending all your ingredients together, you have a higher risk of everything melting faster.
So, wait to make this until you’re ready to enjoy it!
