  • All-purpose flour 
  • White sugar- make sure not to overpack your measuring cup
  • Salt- we like using kosher salt
  • Baking powder- always ensure that you're using fresh baking powder so it actually does what it is supposed to do in your baked goods
  • Cold Butter- cold butter is essential to making the dough. We suggest unsalted butter since we add salt already
  • Vanilla extract- you can make your own or use storebought. Using pure, real extract is always more flavorful than the imitation stuff
  • Egg- we use both the egg yolk and white
  • Heavy cream- We do not suggest trying to swap this for milk or other nondairy options. The heavy cream brings a richness to the scones that really helps with baking, flavor, and texture
  • Vanilla yogurt- you can use regular yogurt or light yogurt
  • Frozen blueberries- you can absolutely use fresh blueberries if desired.

Lemon Glaze

  • Powdered sugar
  • Lemon juice- this compliments the blueberry flavoring
  • Milk- you could swap this for heavy cream if you want a really rich glaze
  • Extra sugar- for topping

How To Make The Starbucks Blueberry Scone

  1. Gather all of your ingredients together and then preheat the oven to 400 degrees Fahrenheit. You will need to prepare the baking sheet with some parchment paper or cooking spray.
  2. In a large bowl combine the dry ingredients of flour, sugar, salt, and baking powder. Give them a whisk together to ensure they are combined. 
  3. Add the cubed butter to the flour mixture. Using a fork or pastry cutter combine the ingredients together. You want the butter to be crumbled to a pea size if possible. 
  4. Next, add the egg and the vanilla. Make sure you mix everything together. The dough will need to be crumbly in texture. 
  5. Get your heavy cream and yogurt and pour into the mixture. Mix together with a fork until a looser dough has formed. It will still be dry and crumbly in texture. 
  6. Add in the frozen blueberries and mix together gently. You will want to avoid bursting into too many blueberries. 
  7. Pour the dough onto a clean surface or silicone mat. Avoid kneading the dough or moving it. Simply form the dough into a round disk and flatten it slightly.
  8. Once you have done that, you can cut it into 6 triangular pieces to create the scone shape.
  9. Now place each scone on the prepared baking sheet. You can then lightly sprinkle the scones with white sugar.
  10. Place in the oven for 15 minutes or until slightly golden brown around the edges of the scone.
  11. Once they have reached that color you can remove them from the oven and let them sit for 15 minutes.
  12. Now it is time to make the lemon glaze. Add the lemon juice, powdered sugar, and milk to a medium bowl and whisk together until smooth.
  13. Once the scones have had time to cool down, you can drizzle the glaze onto the top of the scones. 
  14. Enjoy or let the glaze harden and store the scones to enjoy later.

Recipe Variations

Use other berries. If you like the idea of adding other frozen berries then you could look to include strawberries or raspberries. 

Add extra flavor. You could look at adding extra flavor to your homemade scones. This could be some lemon zest or lemon extract, or add vanilla extra to the dough for a sweeter flavor. 

Make the glaze extra sharp. You could add some lemon zest to the lemon glaze to make the flavor a little sharper. 

Add some chocolate. You could add some white or milk chocolate chips to create blueberry chocolate chip scones. It will add an extra sweetness to the scones.

Storage

Store the scones without the lemon glaze in the freezer for up to 2 months. You can freeze them individually and then add them to a freezer bag for easy storage. Glaze them once they are defrosted with this lemon glaze or a cream cheese frosting. Yum!

You can use fresh fruit instead if you wish. Frozen blueberries offer better value and you can use just what you need. However, fresh blueberries will taste just as good. 

Are the blueberry scones healthy?

They are delicious and sweet baked goods so there are some calories involved in these sweet scones. But, going off the calories in the Starbucks version which is over 400, it isn't as bad as some of the other baked goods you might enjoy.
