How To Make The Strawberry Cake Mix Cookies 

  1. Gather up all of your ingredients ready to prepare these easy cookies. You need to preheat the oven to 350°F and line a baking tray with parchment paper.
  2. Get your box of cake mix and mix it with the vegetable oil and the eggs until all of the ingredients are combined. 
  3. Scoop dough balls of cookie mix, around a tablespoon or so or use a medium cookie scoop, and place them on the baking sheet, allowing 2” space for spreading while they bake. You will want to bake for around 8-10 minutes, or until the cookies look set. All ovens will vary. Let the cookies cool for about 2 minutes on the baking sheet before you transfer them to a wire rack.
  4. You can serve them as they are because they are delicious, but if you want to create some Valentine’s day inspired strawberry cake cookies then place the chocolate melts into a small bowl and melt. You can do this in the microwave in 30-second bursts stirring in between them until they are melted. 
  5. Dip the baked cookies into the chocolate, and transfer them to the wire rack or cookie sheet to set. Sprinkle over any Valentine’s sprinkles or other decorations. 
  6. Once the chocolate is set, store the cookies in an airtight container. Enjoy!

  • When combining the cake mix with the oil and eggs, a hand mixer will make light work of this and have it done in half the time. 

Storage

These are ideal to be stored in an airtight container at room temperature. They will last 1-2 weeks although they will be at their best texture-wise in that first week. 

You could also freeze them. Lay them on a baking sheet and freeze them, then transfer them to a freezer bag for easy storage.
