How To Make Strawberry Champagne Marshmallows
- Gather up all of your ingredients together. Start preparing by lining an 8×8 baking dish with parchment paper, being sure to cover the sides of the pan. In a mixing bowl, mix together the coating ingredients. Cover the bottom and sides of the parchment paper lined baking dish with half of the mixture. Set it aside.
- Add wire whisk to mixer and add the gelatin, champagne, and Jello powder to the mixing bowl. Set aside.
- Mix the sugar, corn syrup, and water together in a medium saucepan over medium-high heat. Cover and let cook for about 4 minutes.
- Remove the cover. Continue to heat the mixture (about 5-10 minutes) until the candy thermometer reaches 240°F (116°C). Remove mixture from heat once you reach the required temperature.
- Stir the gelatin bowl again. Slowly and carefully, add the hot corn syrup mixture to the gelatin mixture bowl and mix on low speed for about 12 minutes. As you stir the mixture it will turn a light pink in color.
- Grease your spatula with nonstick spray and use it to help carefully spread the marshmallow mixture into the prepared pan.
- Add the rest of the coating mixture onto the top of the marshmallow mixture.
- Let it set for 4 hours at room temperature.
- After 4 hours, cut it into cubes, or grease a cookie cutter to cut it into shapes. If the marshmallow is too sticky, spray nonstick cooking spray onto a paper napkin and wipe the greased napkin onto the knife or cutter as needed.
