This flavorful, easy, Instant Pot Chicken Noodle Soup in a Jar recipe is a huge family favorite hit with egg noodles, spices, stock and more.

  • 2 pounds boneless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup onion diced
  • 1 cup celery diced
  • 1 ½ cups carrot diced
  • 2 teaspoons garlic
  • 1 ½ teaspoon thyme
  • 1 teaspoon rosemary
  • 2 basil
  • 8 cups chicken stock or broth
  • 6 ounces wide egg noodles


  • Add olive oil to the Instant Pot. Click Saute and allow it to heat.
  • Toss the chicken in the Instant Pot and cook until the chicken starts to lightly brown on both sides. Stirring and flipping chicken as needed.
  • Add chicken broth or stock, veggies, spices and garlic to the pot.
  • Close the lid, turn and lock it. Select Manual to cook on HIGH pressure for 15 minutes.
  • Use a Natural Pressure Release once it's finished cooking.
  • Carefully remove the chicken, shred it and add back to the pot.
  • Select Saute again and once the pot and contents are boiling, add the egg noodles.
  • Boil until the noodles are cooked and tender - the container they came in will give you a good time reference to start with.
  • Once noodles are ready, stir everything together again, add to Mason Jars and enjoy.
