  • 2 Tablespoons olive oil divided
  • 1 pound ground beef
  • ½ yellow onion diced
  • 2 Tablespoons garlic minced
  • 4 cups beef broth then more to thin as desired
  • 1 14.5 oz can petite diced tomatoes
  • 1 14.5 oz can crushed tomatoes
  • 2 ½ Tablespoons tomato paste
  • 2 Tablespoons Italian seasoning
  • Salt and black pepper to taste
  • 8 lasagna noodles broken into 1” pieces (6.5 oz)
  • 1 ¼ cups shredded mozzarella cheese
  • ½ cup finely shredded parmesan cheese
  • 8 ounces ricotta cheese
  • 2 Tablespoons chopped fresh basil for garnish


  • Turn Saute function on Instant Pot and add oil. Let it heat up and add the onion and saute for 5 minutes. Toss in garlic and saute another minute.
  • Cook ground beef in Instant Pot until rare.
  • Add in broth, tomatoes, seasonings and pasta to the Instant Pot. Close the lid, seal the valve and Cook on HIGH pressure for 8 minutes.
  • Perform a Quick Pressure release and remove the lid.
  • While your soup is cooking, mix the cheeses in a small bowl and set in the fridge.
  • Once soup is ready to serve, add the chilled cheese mixture and fresh basil for garnish.
